Ingredients:





     2 c  All-purpose flour


 1 1/2 c  Granulated sugar


     2 ts Cinnamon


     2 ts Baking soda


     1 ts Salt


   1/2 c  Oil; salad


     2    Eggs; large


   1/4 c  Coffee


 1 1/2 ts Vanilla extract


 2 1/2 c  Apples; peeled and sliced


          -(i.e. Granny Smith)


     1 c  Nuts; chopped


     1 cn Non-stick spray (or butter);


          -for cake pan

 pan (or other baking pan).  Mix all ingredients together in a bowl. Grease


 the cake pan or use non-stick spray. Pour mixture into the pan. Bake at


 350'F for 60 minutes.
