Cheese Latkes

Title: Cheese Latkes
Yield: 4 Servings
Categories: Low-Fat, Pancakes, Low-cal, Cheese

Ingredients:

1/2 lb Cottage cheese, dry curd; or
-farmer cheese
3 Eggs
3 tb Matzo meal, wheat bran, or
-wheat germ
1/2 ts Salt
2 tb Sugar; optional


Mix all ingredients together till smooth. Spray a non-stick griddle or
skillet with vegetable cooking spray. Drop batter by large spoonfuls onto
hot griddle. Cook till browned on bottom; turn over and cook the other
side.

Serving Ideas : Serve with sour cream, jelly or apple sauce.

NOTES : To keep the fat and cholesterol down, you can substitute egg whites
(2 for 1) for all or part of the eggs.
