Title: Chile-Pear Relish

2 1/2 lb Fresh pears; peeled, cored
-and sliced
1 c Brown sugar; firmly packed
3/4 c Cider vinegar
5 tb Chpped onion
1 ts Salt
1 ts Chile powder
1/4 ts Cumin
2 tb Chpoped pimiento
4 tb Chopped green anaheim chiles
1 Serrano chile; seeded and
-finely chopped

From a pamplet I got from Shepard's seeds. Place all ingredients in a heavy
saucepan; stir to blend. Cover and cook the mixture over low heat for 30
minutes, adding an additional 1/4 cup water if necessary. Uncover and
continue cooking for about 25 minutes or just until the mixture is
thickend, stirring frequently. Serve cold.
