Title: Corn Pudding From Maine

Ingredients:
17 oz Creamed corn; low calorie
2 Eggs; lightly beaten
1/2 Skim milk
Salt and pepper to taste
2 tb Margarine; melted
2 tb Red pepper; chopped
2 tb Onion; chopped
15 Crackers; crushed
Mix all ingredients except 1/4 cup of the crushed crackers. Pour into 1 1/2
quart buttered casserole. Sprinkle with reserved cracker crumbs. Bake in
preheated 350 deg F oven for 1 hour or until center is firm.
NOTES : Recipe calls for Ritz crackers
