     3 lb Potatoes; peel, dice, cook


     4    Eggs; hard-boil, dice


     1 sm White onion, dice


     2 tb Pimientos, dice


     2    Ribs celery, dice


     4 tb Creole mustard


     1 lb Smoked sausage, slice thin


          5 mins


     1 c  Mayo


   1/4 c  Parsley, chopped


     2 ds Tabasco


          Salt and pepper






 Mix all ingredients.
