3 Dsp caster sugar
1 Handful coriander; roughly

Finely chopped garlic; 1/2

Salt and pepper
1 Pour the vinegar into a bowl and add the sugar. Stir until it has
dissolved and the liquid is clear.
2 Add the coriander, chopped chillies and garlic and season to taste. Leave
to infuse for half an hour.
