Mary's Pancakes

Title: Mary's Pancakes
Yield: 1 Servings

Ingredients:

2 c Flour
1/3 c Sugar
1 tb Baking powder
1 ts Salt
2 Eggs; beaten
1 1/2 c Milk
1 Stick butter; melted


Sift the dry ingredients into a medium sized bowl. In another bowl beat
eggs; add milk and beat together. Add milk and egg mixture to the flour
mixture and mix well. Lastly add 1/2 stick of melted butter. Let stand for
about 10 minutes. Heat griddle. When hot, brush with a little butter. Pour
1/8 to 1/4 cup of batter on griddle. When the pancake is all bubbly, turn
and brown on the other side. Keep your griddle very hot, but not on the
highest setting. No need to add any more butter to griddle for additional
pancakes. Just cook the pancakes and enjoy. If your griddle is large, you
can do several pancakes at a time. Fresh berries, chocolate chips, chopped
mangos, or whathaveyou, makes the pancakes interesting and different. Serve
with pure maple syrup or spread on a little butter on each pancake and
shake powdered sugar on top. Any way you fix these, they're winners! NOTE
