Title: Red Onion Relish - Country Living
Yield: 3 Cups

Ingredients:

1/4 c Olive oil
2 lb Large red onions; sliced &
-separated into rings
1/4 c Red-wine vinegar
2 tb Sugar
1/2 ts Salt
1/4 ts Ground white pepper


In large skillet, heat oil over medium heat. Add onions and saute 5
minutes. Reduce heat to low, cover and cook onions 15 minutes or until
tender, stirring occasionally.

Stir vinegar, sugar, salt and pepper into onions. Cook 5 minutes longer or
until mixed. Transfer to serving dish and serve warm or at room
temperature.
