Title: Rice Malgache
Yield: 4 Servings

Ingredients:

2 tb Butter
2 tb Chopped scallion
1 Green pepper, coarsely
-chopped
1 c Carolina rice
1 ts Salt
1 pn Saffron
1 c Consomme
2 c Boiling water


---------------------------------DIRECTIONS---------------------------------
1 In a large saucepan, heat
-butter. Add scallion and
Pepper Cook until browned.
-Add rice and cook, stirring
Constantly, until rice is
-well coated with butter.
2 Add salt, saffron, consomme,
-and water. Bring to a
Boil Cover and simmer for 15
-minutes, or until rice
Has absorbed all the liquid.
-Serve hot.
