Top of the World Chicken Salad
2 lb Boneless skinless chicken
1 c Mayonnaise
2 tb Peach juice
1/2 c Heavy cream; whipped
2 c Peaches; canned, drained and
Cut cooked chicken breast meat into 1/2 inch cubes and set aside. Blend
mayo and peach juice in a 2 quart mixing bowl and fold in whipped cream.
Season with salt and pepper as needed. Add cubed chicken meat and diced
peaches and mix lightly, coating chicken.
Stir gently until blended. Refrigerate 1 hour. Can serve with lettuce
instead of bread.
